9 easy steps for Lazy Lasagna for the whole family

Is there anything better than a rich and gooey comfort food at the end of a stressful day? We absolutely love Italian and while spaghetti is great it gets a little boring after a while. The next step up for me that is both satisfying and is guaranteed to leave some leftovers for the next day is lasagna! For people that either are not dinner savvy or are just super busy lasagna can be something we do not want to take the time to prepare. Years ago in a pinch, I would just buy a premade one and throw it in the oven. While edible, it never quite hits the spot and I promise no one is writing rave reviews about frozen dinners. This recipe is going to teach you how to make homemade lazy lasagna that is delicious…..and so easy (lazy) but they’ll never know.

Ingredients:

  • 2 jars of Marinara/Spaghetti sauce (I like brands that have a lot of chunky veggies in them)
  • 16 oz shredded Mozzarella, Parmesan, or Italian cheeses (You can use any cheese you prefer or a mixture of all if you’re feeling adventurous)
  • 15 oz Ricotta cheese
  • 1.5 to 2 lbs hamburger or ground sausage
  • 2 packages of oven-ready lasagna noodles
  • Seasoning to taste

Directions:

Step 1: Preheat oven to 425 degrees

Step 2: Brown and season your hamburger or sausage to your preference, chopping it up as it cooks. ( I use A LOT of garlic for seasoning)

Step 3: Pour a shallow layer of sauce coating the bottom of your casserole dish. (I use a 11X9 but you can use any size you want depending on how many you are feeding. Just know if it’s bigger or smaller you may need to adjust the recipe a dash)

Step 4: Put down the first layer of oven-ready noodles. Remember this is lazy lasagna so we don’t even have to cook them first. They should be stiff. Overlap the noodles slightly to make a strong foundation.

Step 5: Cover layer of noodles with a generous amount of sauce making sure to cover all of the noodles.

By the time that you have gotten to this step- I know what you are thinking. I just want to eat dinner and how long is this going to take. They said this was lazy lasagna. You’re right! Let’s combine some steps to finish this quickly.

Step 6: In a bowl combine meat, ricotta, and your choice of shredded cheese. Take a large scoop of the mixture and spread evenly over the layer.

Congrats! All of the time-consuming prep is done. Now to finish this lasagna!

Step 7: Repeat steps 4, 5, and 7 for an additional three layers. You can do more or fewer layers depending on the depth of your pan.

Step 8: Almost time to eat! For the top layer simply sprinkle additional cheese across the top and cover with aluminum foil.

Step 9: Bake for 50-60 minutes. Garnish with bread and salad if you like.

Generously serves 6-8 people

We are a recently blended family of five. As the parents in this household, we have a variety of struggles with two bouts of cancer, fibromyalgia, and hypertension between us. We are real people just trying to help others with similar difficulties bring back the joy and fun in your family’s life. Our happy family consists of three wonderful children with ages ranging from eight to seventeen. Between our children, we are challenged daily with diagnoses such as ADHD, Autism, and spirited personalities all around. They each have their own strengths as well as struggles giving them each a delightful and unique addition to our family. We are also blessed with several fur babies such as our two quirky pups, three moody cats, and a chunky bunny. With this ever-growing circus, we are always looking for life hacks to make life just a little easier.
